Brien has loved creating and serving great food for as long as he can remember. He holds degrees in culinary arts and restaurant and hotel management, and he has extensive experience developing menus for national brands like Chef Point Café, Pappas Bros. Steakhouse, Pappasito’s Café, and Knife Dallas.

Brien has managed restaurants for years as well, and his dual experience helps him keep Highrail Southern Eatery running with a customer-first attitude and a menu of country classics and new favorites.

Sous Chef & Manager

Chef Lisa has been preparing meals for her family since age six. Food has always been her passion. She owned and operated a catering business for 25 years, teaching herself the trade and the business of pleasing the appetites and tastes of her guests.

She attended the distinguished Auguste Escoffier School of Culinary Arts and has earned four culinary degrees and six Presidential Badges of Honor while also earning a 4.0 grade point average in all her studies.

Chef Lisa also obtained an Associates of Occupational Studies in Hospitality and Restaurant Operations Management, an Associates of Occupational Studies in Food and Beverage Management, an Associates of Culinary Arts and Operations and a Diploma of Occupational Studies in Baking and Pastry.

Chef Lisa brings all of this education and knowledge to Highrail Southern Eatery along with her passion for pleasing each of our guests.
